Straw­ber­ry, Thy­me is alre­a­dy part five of our Pho­ne­tic Sour Beer series. When desig­ning the recipes for this series we are always loo­king for an exci­ting inter­play of aro­mas and fla­vors. Straw­ber­ry was on the table for quite a while now but fin­ding its co-star took some time to deter­mi­ne. We wan­ted to avo­id more obvious fla­vor com­bi­na­ti­ons like vanil­la or coco­nut becau­se this series exists to show­ca­se more uncon­ven­tio­nal pai­rings. Thy­me works won­derful­ly here with its her­bal, slight citrus aro­mas pro­vi­ding a robust back­bone for the sof­ter straw­ber­ry flavors.

Nose/Flavor: Mild acid­tiy, Straw­ber­ry field, subt­le citrus­sy and her­bal notes from the thy­me which evol­ves when get­ting warmer.

Stil:  Frui­ted Sour

ABV: 6,0%
